Rosso di sera bel tempo si spera



Crostatine di buon augurio nella speranza che questa estate londinese non sia del tutto terminata.
Tra lo sconforto e i luoghi comuni del tipo:" questi pomodori non sanno di niente", oppure :" ma ti pare che devo comprare fagiolini che arrivano dal Peru'?" mi consolo con una bella selezione di frutti di bosco che qui, almeno, sono abbondanti e decisamente piu' a buon mercato che in Italia.
Queste tortine sono il mio modo per accorciare le distanze tra Inghilterra e Italia, un connubio perfetto tra nord Europa e Italian Style poiche' la base della pasta frolla ( niente pasta sablée, né brisè, né sucrée etc.) e' by Giovi, cuoca italiana"doc", nonche' mamma ... il che rende tutto piu' dolce!

Ingredienti per la pasta frolla di Giovi
400g di farina
150 g di zucchero
150 g di burro
1 tuorlo
2 uova intere
una bustina di vaniglina ( io ho usato essenza di vaniglia)
1 cucchiaio di lievito per dolci

Per la crema pasticcera
3 tuorli
1/2 litro di latte
100 g di zucchero
50 g di farina

Frutti rossi
lamponi
mirtilli
ribes
more
fragole

Posizionare a fontana la farina setacciata con il lievito e lo zucchero su un piano per impastare. Aggiungere poi al centro il burro sciolto leggermente a bagno maria e le uova.
Aiutandosi con una forchetta cominciare a sbattere leggermente le uova incorporando la farina gradualmente fino a che non otterremo un impasto da lavorare a mano ( ma non troppo per evitare che l'impasto si riscaldi a discapito della friabilita').
Avvolgete poi l'impasto nella pellicola e riponetelo in frigo per almeno un paio di ore.
Nel frattempo preparate la crema pasticcera, ponendo in una casseruola dal fondo antiaderente 3 tuorli. Aggiungete lo zucchero creando una bella crema, poi aggiungere la farina setaccita e continuate ad amalgamare. A filo aggiungete il latte leggermente tiepido nel quale avrete lasciato in infusione una scorza di limone e la vaniglia.
Mettete sul fuoco il composto e girate con una frusta fino a quando non si sara' perfettamente addensato. Quando la crema sara' densa lasciatela sibollire per un paio di minuti e toglietela da fuoco.
Tirare la pasta frolla fuori dal frigo, aspettare una mezz'ora che ritorni a temperatura ambiente e poi stenderla con uno spessore di un paio di centimetri.
Imburrate accuratamente gli stampi da crostata (se utilizzate il silicone ovviamente non sara' necessario) e adagiatevi i dischi di frolla. Cuocete la base che avrete bucherellato e ricoperto di fagioli secchi per all'incirca 20 min (il tempo che si colori leggermente) a 170°C.
Tirate la base della crostata fuori dal forno e aspettate che si raffreddi.
Infine farcite le crostatine con la crema e divertitevi a guarnirle con la selezione di frutta che avrete preventivamente marinato con dello zucchero e una spruzzata di limone.

Ingredients for the Giovi's pasta frolla
400 g all purpose flour
150 g butter

Make the pasta frolla first: sieve the flour as a fountain, add sugar, vanilla sugar and baking powder. On the middle of the fountain make a hole and add the butter slightly melt and he eggs.With a fork beat the eggs and start to mix gradually eggs butter and flour till you can make a dough. Only work the dough so long as necessary to get all the ingredients together into a uniform mass but not longer. Flatten out slightly, wrap in plastic and transfer to the fridge for at least two hours.
In the main time you can prepare a cream whisking three yolks with sugar and then flour. Next add some tepid milk flavoured with lemon zest and vanilla. Stir it slowly and gently.
Set the pot to heat over a low flame, stirring gently, until it barely reaches a slow boil.
Once the dough has rested enough remove it from the fridge and wait about 20-30, minutes just enough to make it workable. Pre-heat the oven to 170°C. Roll the dough to the desired thickness using all the flour you need to keep it from sticking to you rolling pin and the working surface. Once rolled out, transfer it (extremely carefully, help yourself by rolling the dough around the rolling pin) to a tart forms. Trim off all the excess dough and brush off any excess flour with a pastry brush. At the end riddle the bottom of the tars and put on top some beans. Bake for about 20 or 30 minutes, till gold brown, turning the cake around midway.
Let cool the pastry before and then fill it with cream and fruit al ready dressed with sugar and lemon juice.
